BAKING: tahini/chocolate/cinnamon nutkopff. German recipe that's basically a babka/krantz, but with only one short proove. Bloody delicious, but more cakey texture than a true babka and a little drier (as less butter/eggs), so will try a more juicy filling for the next one (thinking of a marmalade/choc one - what do you think?). FYI makes a great breakfast....
PIZZA TOPPING: meatball, greens and wild garlic pesto. The meatballs easily made from sausages, the greens sea kale and asparagus, but tenderstem and kale would work too. This is the first time I've used @shiptonmill tipo 00 (thanks @trove_foods for stocking it!) and my, my it's worked up to the softest pizza dough I've ever made. RECIPE: pork chops with pineapple salsa - serves 2, takes 45 mins (2 recipes for the price of one here) 👇👇👇👇👇👇👇👇 🍍In a 200c oven place 1 large sweet potato cut into wedges, which you've covered in oil, salt, pepper and a good drizzle of honey🍍once the wedges are softening, season a pork chop and fry over a medium high heat 🍍in a bowl add 1/3 of a cucumber sliced into half moons, 1/4 large, ripe pineapple cut into chunks (or 3 pineapple rings from a tin), one finely sliced red chilli, 4 finely shredded sprigs of mint (leaves only), season with salt, squeeze over the juice of a lime and taste (adjust if needed)🍍serve up with a good splash of @cookingwithmamaz banana ketchup (or bbq sauce if not, it doesn't compare, but it'll go) 🍍I've also served some 5 spice roasted pineapple alongside this - season slices of pineapple with 5 spice, honey and salt, fry in a pan until caramalised, then keep warm in the oven until you want to eat (also makes a banging breakfast with yoghurt if you have leftovers). . . . . . . . . . . . . #foodblog #foodblogger #food #foodie #foodies #instafood #foodstagram #alwayshungry #mcrfoodie #mcrblogger #dinner #homecooking #cook #recipe #manchester #levenshulme #levymassive #manchesterblogger #foodphotography #foodporn #foodlover #mcreats #manchestereats #foodlove #mcrcooks #pork #pineapple
RECIPE: banana/blueberry pancakes. Makes about 6, 20 mins 🥞 in a mixing bowl combine 125g self raising flour, 1tsp cinnamon, 2tsp caster sugar, 1/2 tsp baking powder, pinch of salt and make a well in the middle 🥞 into the well crack an egg and start combining with balloon whisk or fork. Whilst mixing pour in enough milk to make a thick batter - like extra thick double cream 🍌 Slice 2 not too ripe bananas into long quarters, dust the flat side with a small amount of icing sugar 🍌 in a large frying pan (or two small) add a knob of butter, turn up to a medium high heat and once bubbling place the bananas flat side down - a large pan can do 2, small = 1 🥞 pour a ladle of the pancake mix over the banana, so the fruit is in the middle, place blueberries into the cooking pancake batter 🥞 once bubbles start showing in the top of the batter, add a little more to the top of the pancake to almost cover the berries and flip over 🥞 remove once batter is set and cook the rest 🍌top with maple syrup and a dusting of cinnamon - I like to have yoghurt on mine too 🥞 FYI I can eat three (just), but 2 is a sensible portion really... 🥓Chocolate and/or bacon make good toppings too . . . . . . . . . . . . . #foodblog #foodblogger #food #foodie #foodies #instafood #foodstagram #alwayshungry #mcrfoodie #mcrblogger #breakfast #brunch #manchester #mcrblogger #foodphotography #foodporn #foodlover #foodlove #pancakes #homecooking #cook #recipe #cooking #mcrcooks
RECIPE: harissa makeral one dish dinner. Serves 1 (scale up!), takes about 40 mins. This is an easy 'forget about it' dish full of big flavours - which makeral takes really well. You could replace the makeral with chicken if you're not a fish person - adjust cooking times to suit. 🐟 Place a handful of baby new potatoes and 1/4 small cauli, broken into florets and 1/2 red onion in slices, in a roasting dish. Add 2tsp ras al hanout, 1 tblsp runny honey, salt and oil, mix and place in 200c oven 🐟 after 20 mins drop the oven to 180c, add a few stems of tenderstem and mix through so they're covered in the oil.
